Spicy Sausage Fideua

45 minutes. To make this recipe use a large paella or frying pan or a wok with a large base

Follow These Steps

  1. Fry sausages in 1 tablespoon of Olive Oil until browned then remove from pan and cover with foil to keep warm
  2. Add onions, garlic & mushrooms to pan and fry over medium heat to brown
  3. Make up your stock and in a separate jug pour a little hot stock over your saffron strands and leave to stand
  4. Add the remaining oil to the pan along with the tomatoes and smoked paprika and fry over medium heat until tomatoes become soft
  5. Roughly slice your sausages into threes and return to pan
  6. Add the stock and increase heat to bring to boil
  7. Add your spahetti and push down with wooden spoon to ensure it is all covered with stock, boil for 1 minute
  8. Reduce heat to fast simmer and add the Saffron and remaining liquid, leave to simmer stirring the mixture from time to time to stop it sticking
  9. Once the spaghetti has absorbed all of the liquid season to taste and stir in the roasted red peppers
  10. Serve with lemon wedges to add a tangy twist
